Sunshine breakfast bowl

This is a yummy breakfast I stumbled across when making my weekly batch of oaty bars for snack sustenance. We are a household of porridge eaters and so we welcome any quick variations to make breakfast a little sunnier.


This is quite straight forward and you can adapt to suit your and your family's tastes.

This batch makes enough for 2. My daughter and I in this instance as a lazy Saturday breakfast in late summer.


Ingredients

🍌 One soft ripe banana

🍊One large navel orange

🥣 Pre-mixed homemade muesli or

  • 1 cup of oats

  • 1 tablespoon of chia seeds

  • 1 tablespoon of pumpkin seeds

  • 1 tablespoon of mixed dreid fruit such as cranberries, apple, raisins

  • 1 handful of mixed raw nuts or nuts of choice such as almonds, walnuts, brazil nuts

🥥 Coconut milk or plant milk of choice


What to do:

  1. Cut the orange in half and reserve half for later

  2. Take half, cut into rough pieces and add to the flesh of the banana in a blender.

  3. Whizz until smoothe (10-20 secs) Add large splash of your milk of choice .

  4. Add this smoothie liquid to a pan and then 2 cups of muesli mixture.

  5. Turn the heat on low under the pan and heat until the oats start to soften, add more milk if required to the consistency you like. Don't leave it too long as it may start to catch on the bottom of the pan.

  6. Once warm, soft and bubbling, serve in 2 bowls and top with segments of the fresh orange.

  7. Enjoy
